The name’s confusing: ‘Rabot Hotel from Hotel Chocolat’. A chocolate hotel without air conditioning sounds like a physics experiment gone wrong, but the elevation and ceiling fans make it work – mostly. The 24 rooms share a shuttle to the beach, which is less “inconvenient” and more “forced digital detox.” Morning yoga is complimentary, presumably to help you rationalize the chocolate consumption to come. The 20% tax feels less painful when you consider you’re essentially paying for the privilege of living in a chocolate estate that predates the American Revolution. You can literally walk to Ladera for sunset drinks – a rare feat in these taxi-dependent hills.

The dining scene extends beyond the estate’s borders – Ladera’s sunset bar sits tantalizingly across the street, while Sugar Beach and Stonefield offer escape routes when you need a brief chocolate sabbatical. Soufriere town remains a culinary mystery we’re politely advised not to solve, and close by Fond Doux resort should be avoided.
