The culinary program takes “local sourcing” to new heights – or rather, new proximities. The on-site organic farm isn’t just for show; it’s your dinner’s previous address. Being the only restaurant option could feel limiting, but when the food travels meters rather than miles, you’ll find yourself surprisingly unbothered by the lack of alternatives… In fact it’s nice not to have options. It’s a buffet style set up which we’d normally chafe at, but works here because the buffet includes wood-fired meats, authentic hand-made tortillas and so much more. The bar proves sustainability pairs nicely with sunset cocktails, while breakfast views make early rising feel less like virtue and more like opportunity.
