Stuff You Should Know

This is not a conventional retreat, and that is entirely the point. It’s adults-only, and the nine-square-meter rooms (called Celluzze) have no WiFi, television, telephone, minibar or conventional air conditioning. Many rooms have French-size beds and are designed primarily for solo travelers. Dinner is communal, served at 7:30 PM and eaten in silence. Rates include full vegetarian board, wine with meals, yoga, meditation and the wellness area, with a two-night minimum stay. The final eight kilometers are on an unpaved forest road, followed by a jeep pickup from the parking area. Pets are not allowed.

Monastic Vegetarian Dining, Served in Silence

Dinner at Eremito is less a meal than a nightly ritual. Guests gather at long wooden refectory tables surrounded by around 200 candles, while Gregorian chant replaces conversation. The entirely vegetarian fixed menu follows what the hotel describes as a monastic Mediterranean tradition, using seasonal ingredients from its organic garden and local Umbrian producers. Breakfast, lunch and dinner are included, along with water, house wine and herbal infusions. Bread, pasta, cakes and preserves are all made in-house. In warmer weather, lunch is sometimes served outdoors beneath the grapevine pergola. There is no room service or conventional bar—communal dining is an intentional part of the experience.
