Stuff You Should Know

Castello di Vicarello is remote by design, near Poggi del Sasso and Cinigiano in Tuscany’s wilder Maremma countryside. You need a car or private transfer; the final approach includes an unpaved road through forest and vineyards, and GPS can be unreliable. This is not a walk-out-to-town hotel. It is best for 2–3 nights, design lovers, food people, wine lovers and guests who want to stay mostly on the estate. Open March through November; closed for winter.

Aurora's kitchen, estate wine and Maremma views.

Food at Vicarello is less a conventional restaurant and more Aurora’s kitchen turned into a hospitality experience. The menu changes with the season and the kitchen garden, which grows dozens of vegetables and herbs. Cooking classes start in the garden and move into the historic kitchen. Wine is produced on the estate, with tastings led by the sommelier, and dining shifts between the courtyard, verandah, grass terrace, fireplace or garden depending on weather and season. Rooftop drinks become a fuller bar-and-dinner setup in summer, with honesty bars in the lounge and by the pool.
